Ice Cream Frozen Yogurt Popsicles

A couple weeks ago I made peach ice cream.  I froze it in covered glass bowls.  Unfortunately it's impossible to scoop out when you really want ice cream.  You see, it's not really ice cream.  It's frozen yogurt.  Real frozen yogurt.  See my recipe below.
So, when I found this 4 pack of popsicle molds on a discount site I snapped them up.  I love the handle!  And yes, you can add fancy toppings if you want, but that's not why I bought them.  I just love that a child can hang onto them.  There's also a lip to collect drips. I also love that you can that one at a time- and even return them to the freezer if for some reason they're not finished (they kind of snap together)!  Very practical in my book. Yes, C somehow couldn't finish his first pop, so I put the cover on and put it back in the freezer.
Thus, my popsicle molds, had me thawing out my "brick like ice cream" and creating popsicles.

Frozen Peach Yogurt
16oz plain greek yogurt
Approx 3 peaches, cut into smaller pieces
1/4 cup sugar
lemon juice (as needed to get things mixing or to taste, optional)

Add ingredients to blender.  Mix until smooth.  Add to popsicle molds or freeze in individual containers.
I've been looking at this quick pop maker that can make three in 7 minutes!  Unfortunately it's $50, so that's not happening.  If you are interested they also make them in duo, and single, which of course are less expensive.

Of course, there's always the classic style at the dollar store that makes four to eight at a time too.
