I know sometimes it's hard to come up with fresh (and easy) recipes for
the family. I'm picky, I won't lie, so here are a couple recipes that C
(most of the time) and I love.

Fruit Salad
It's the next easiest thing since pb&j. Grab three (or more) fruits you have around, cut them up, put in a bowl, and you have a fruit salad.
C and I love these. I usually make very large bowls when I'm lazy and don't know what to do about supper.
My favorite add-in is mandarin oranges. I like to add all of our fresh fruit with some canned mandarin oranges to add a little bite. The above photo includes bananas, blueberries, peaches, strawberries and mandarin oranges.
Tip: Let your child cut up the bananas with a dull butter or silicone knife. C loves to help and it's his new thing- cutting (and separating equally into the bowls).
Microwave Chips
Super healthy potato chips!
Ingredients:
1 or more potatoes (It's best to use a regular potato, not red or golden. Trust me, I've experimented).
Salt
Pop chip trays & mandolin
Slice, add to tray, salt over sink, stack trays, and microwave for allotted time (depends on how many trays you're using), enjoy!

No, mine were found on woot.com this past winter. I probably paid $25 for the entire 3 trays and mandolin.
These really don't have a recipe. Just use whatever you have on hand. Here's our favorite.
Ingredients:
Tortillas
Mushrooms
Cheese
Spinach
leftover Chicken
leftover Karla's Alfredo
Sour cream
Spread sour cream & Karla's Alfredo on one side of two tortillas.
Add your desired toppings.
Butter/ grease/ oil a pan and start cooking like you would a grilled cheese (until it's golden on each side).
