A Few Of My Favorite Recipes (Part 4)

Wow, it's been a while since my last one!

Smoothies
1 fruit that is frozen
1 fruit that is not frozen
More fruit as desired
1/4 to 1/2 cup Fresh spinach or 1/4 cup pureed carrot
Add yogurt or honey if desired.  We like cool, thicker smoothies and they don't need to be sweetened.
This makes about two decent smoothies. 

I truly use what I have on hand and eyeball the amounts.  The more you make them the less thought you'll really put into it.

If a fruit is ready to go bad, throw it in.  You really can't go wrong with these!  Try mixing a sweet fruit with something more subdued.  Examples: Raspberries and apples, pineapple and pears/ peaches.

I read somewhere that a serving of spinach as around 22grams of protein.  Yes, that solidified my view on these smoothies.  I used to give them to C when he wouldn't eat a thing, but I wanted some nutrition (protein, vitamins, fruit, vegetable) in him.  It's food in drink form.  Can't get much better than that.

Start with your base- ice or a frozen fruit.  Pulse as ice.
Frozen raspberries today.

Add your second (or third) fruit.  Blend.
Oranges for us this time.
 Add in your spinach.  Blend.
At the last minute C decided he wanted carrot too.  I'm certainly not going to say no.  So, I microwaved my frozen carrot puree a bit and tossed it in.  
Normally, if you add frozen carrot puree you could add it along with your ice or frozen fruit.

This isn't the smoothie I made in the earlier pictures.  I forgot to take pictures of the final product.
Also, there's something "special" about putting smoothies in reused restaurant cups.

Serve!

Mozzarella Sticks
String cheese
Egg roll wrappers
Olive oil or vegetable oil
Marinara or other dipping sauce as desired

Wrap string cheese in egg roll wrapper.
Use a bit of water to seal the edge of the wrapper.
Place on pan.
Brush top with oil of choice.
Bake 350 degrees for 15 minutes.

Tasty, cheaper than store bought, and easy!  Make as few or as many as you want.
