I know sometimes it's hard to come up with fresh (and easy) recipes for the family. I'm picky, I won't lie, so here are a couple recipes that C (most of the time) and I love.

Karla's Alfredo
2 tbsp. Butter
2tbsp Flour
1 C. Milk
1tsp. Salt
pepper as desired
cheese as desired
In a small saucepan, melt butter.
Add flour and whisk to form a thick paste.
Add milk, salt, and pepper. Heat on medium low just until boiling, then turn heat to lowest setting.
Add any desired cheese (sometimes I do, but most times I don't).
Sauce will begin to thicken. Serve when desired thickness is achieved.
(Makes enough for 2 adults in my opinion)
I love to serve this with green beans and tortellini. To save time and dishes I add my beans to the boiling water that the noodles are in. You just have to add them a little earlier or later depending on the fresh or frozen state of the beans.
Pumpkin Doodles
I often serve these for breakfast. Think I'm crazy? I'm not, really. I looked at a pumpkin mini muffin recipe that was intended for breakfast and these have less sugar and no oil in them. Definitely better for breakfast then! Plus, there's pumpkin in them! A great source of vitamin A.
Be sure to make at least a double batch of these as they'll disappear quickly.
Also, consider making and freezing them. Prepare as if you're going to bake them, but put on a cookie sheet and freeze for three- four hours. Then remove and they should be hard. Package in freezer bags. When you want to bake them, simply add a minute or two to the baking time. No need to thaw. The best part...you can make one or two dozen. Portion control at it's finest.
